Passionfruit Slice

  • 1 cup self raising flour
  • ½ cup castor sugar
  • 1 cup desiccated coconut
  • 150 butter melted
  • 3 tbsp passionfruit pulp
  • 395 grams sweetened condensed milk
  • 3 tbsp lemon juice


  • Preheat oven to 160 C fan forced – grease and link an 18X28cm slice pan
  • Sift self-raising flour in large mixing bowl
  • Add caster sugar, coconut and melted butter. Mix together until a dough forms (its easier to use your hands)
  • Press mixture firmly into slice pan – smooth top with the back of a spoon
  • Bake in oven for 12-12 minutes or until lightly golden – set aside to cool slightly
  • Reduce oven temp to 150C (turn off fan forced)
  • Whisk condensed milk, lemon juice and passionfruit pulp together (it should slightly thicken)
  • Pour mixture over top of cooled slice base
  • Place back in oven for about 15 minutes (or until passionfruit layer has set when lightly touched)
  • Leave in pan to cool completely before slicing
